Egg Cups alla Pizzaiola

 

Keto egg cups, pizza style!

Ingredients

30 pepperoni slices

6 teaspoons pizza sauce

2 ounces string cheese, cut into thirds (6 pieces, total)

6 eggs

1 teaspoon oregano

1 teaspoon salt

Chopped parsley, for garnish

Instructions

  1. Preheat oven to 400F. Shingle 5 pepperoni slices on the bottom and sides of 6 wells of a muffin tin (in an even layer).

  2. Place a teaspoon of sauce on the bottom of each well, followed by one piece of string cheese.

  3. Crack an egg into each well and season each egg with a pinch of oregano and a pinch of salt.

  4. Bake for 14-16 minutes, depending on cooked you like your yolks.

  5. Rest muffin tin on a cooling rack for 20-30 minutes to allow the egg cups the opportunity to firm up slightly before unmolding. Garnish with chopped parsley.
