Big Mac Meatloaf
You might think this is too much meatloaf for two. That just tells us you haven't made it yet.
Ingredients
1 pound ground beef
1 large egg, lightly beaten
1/2 cup fresh breadcrumbs
1/4 cup finely diced onion
1/2 cup plus 2 tablespoons mayonnaise
1 tablespoon ketchup
3/4 teaspoon garlic powder
1 teaspoon onion powder
3/4 teaspoon salt
1/4 teaspoon black pepper
4 ounces deli American cheese, shredded
1/4 cup chopped hamburger dill pickle chips
1 teaspoon sesame seeds
2 tablespoons sweet pickle relish
2 teaspoons finely grated onion
1/2 teaspoon paprika
1 teaspoon yellow mustard
Instructions
Heat the oven to 350F. Line a small baking sheet with parchment paper.
Add the ground beef, egg, breadcrumbs, diced onion, 2 tablespoons mayonnaise, ketchup, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon salt, black pepper, American cheese, and chopped dill pickles to a large bowl. Using your hands, gently mix just until evenly combined.
Transfer the mixture to the prepared baking sheet and shape it into one compact loaf. Sprinkle the sesame seeds evenly over the top.
Bake for 40–50 minutes, until the center of the meatloaf reaches 160F. Let rest for 10 minutes before slicing.
While the meatloaf bakes, stir together the remaining 1/2 cup mayonnaise, sweet pickle relish, grated onion, paprika, remaining 1/2 teaspoon onion powder, remaining 1/4 teaspoon salt, remaining 1/4 teaspoon garlic powder, and yellow mustard until thoroughly combined. Refrigerate until ready to serve.
Slice the meatloaf and serve with Big Mac sauce spooned over the top.
