Manhattan BBQ Ribs

The next time you decide to make Manhattans, why not make one extra, add it to your BBQ sauce, and make some ribs??

Ingredients

For the Manhattan BBQ Sauce:

1 cup ketchup

1/2 cup crushed tomatoes (or tomato passata/purée)

1/2 cup beef stock

1/4 cup Worcestershire sauce

2 tablespoons brown coconut sugar (or light brown sugar)

2 tablespoons apple cider vinegar

1 teaspoon black pepper

1 tablespoon chili powder

1/4 cup grated onion

1 tablespoon garlic paste

1 Manhattan

For the Ribs:

1 rack baby back ribs

3 tablespoons spice rub

Instructions

For the Manhattan BBQ Sauce:

Simmer all ingredients through Manhattan in a pot over medium low for 20-30 minutes.

For the Ribs:

  1. Preheat oven to 300F. Season baby back ribs, front and back, with about 3 tablespoons of your favorite spice rub.

  2. Seal the rack completely in aluminum foil. Place on a baking sheet and bake for 2 hours.

  3. Remove the ribs from the oven and fire up the BBQ.

  4. Take the foil off and let the ribs rest for 10 minutes or so.

  5. Cut down cleanly between the bones and brush each rib with your luscious Manhattan BBQ sauce.

  6. Grill the ribs until you see some nice charring, about 5 minutes per side.

  7. Let them cool for about 5 minutes, grab some wet wipes, and chow down!
