Strawberry Walnut Muffins
Buh-Bye, bah-nana... We're mixing strawberries with carbs now!
Ingredients
8 ounces fresh strawberries, puréed until smooth
2 cups flour
3 egg whites
1/2 cup sugar
1/4 cup brown sugar
1/3 cup vegetable oil
3 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon salt
1/4 teaspoon ground ginger
1/4 cup walnuts, finely chopped
Instructions
Combine all ingredients and transfer and equal amount of batter to each well of a non-stick 12-cup muffin tin.
Bake for 20 minutes at 400F.
