Chicken Poppers with Carrot Ginger Sauce

Ingredients

Chicken Poppers:

1/2 pound ground chicken

1 cup raw carrot, finely grated

1 tablespoon chopped cilantro

1 tablespoon coconut oil

1 teaspoon coconut flour

1-2 scallions, minced

1 teaspoon garlic powder

1 tablespoon onion powder

1 teaspoon sea salt

Carrot Ginger Sauce:  

¼ cup of grated carrot 

3 tablespoons of fresh orange juice (not from concentrate, no sugar added) 

2 tablespoons of chopped green onions 

2 teaspoons of apple cider vinegar 

1 teaspoon of honey 

1 teaspoon of fresh ginger, peeled and minced 

1 teaspoon of Salt 

Instructions

Chicken Poppers:

  1. Preheat the oven to 400F and line a baking sheet with parchment paper. Combine all of the ingredients in a large mixing bowl and thoroughly mix. 

  2. Begin rolling the mixture into small, slightly flattened poppers about one inch in diameter (6-8 poppers) and place them on the baking sheet. 

  3. Roast in the oven for about 25 minutes, flipping halfway through. 

Carrot Ginger Sauce:

Add all ingredients to your food processor and blend well.
