Shrimp Asada
Perfect for your pescatarian friends, we’ve lightened up the traditional Asada steak marinade and slathered it on shrimp Pair it with Taco Slaw and have a fiesta!
Ingredients
1/2 cup cilantro leaves and stems, finely chopped
1/4 cup olive oil
1/4 cup orange juice
1/4 cup lime juice
2 tablespoons honey
1 tablespoon oregano
2 cloves garlic (or substitute two teaspoons of garlic paste)
1 small jalapeno, seeds removed
1 pound extra-large shrimp
1 tablespoon vegetable oil
Instructions
Combine cilantro, olive oil, juices, honey, oregano, garlic, and jalapeno in a blender and blend for 30 seconds.
Pour blended mixture over shrimp and marinate for 20 minutes.
Drain off marinade and heat vegetable oil on a grill pan or skillet over medium-high heat. Grill shrimp about 2 minutes per side until nicely charred but not overcooked. Cooking time will vary based upon the size of your shrimp.
