Pesto Chicken Meatballs

Pesto and sweet peppers combine to make a mouthwatering meatball!

Ingredients

8 ounces ground chicken

8 ounces sweet mini peppers, sautéed and chopped

1/2 cup pork rind crumbs

1/2 cup Parmesan, grated

1 teaspoon Garlic salt

3 tablespoons pesto

Instructions

1. Combine ingredients and roll into 6 meatballs.

2. Place meatballs on a baking sheet and roast at 400F for 30 minutes.
