Mint Chip Tiramisu
A single layer of 8 ladyfingers, mini chocolate chips and some minty cream. This is what Dink desserts are all about!
Ingredients
6 ounces mascarpone cheese, softened
3/4 cup cold heavy whipping cream
1/4 cup powdered sugar
1 drop natural green food coloring
1 teaspoon vanilla extract
6-8 ladyfingers, broken as needed to fit the dish
2 tablespoons, plus 2 teaspoons Crème de Menthe (separated)
2 tablespoons water
1 teaspoon vanilla extract
1/3 cup mini dark chocolate chips
1 ounce dark chocolate, finely shaved
Instructions
Whisk together 2 tablespoons Crème de Menthe, water, and vanilla extract in a shallow bowl.
In a large bowl, beat the mascarpone, powdered sugar, remaining 2 teaspoons Crème de Menthe and food coloring until smooth. In a separate bowl, whip the heavy cream to medium peaks, then gently fold it into the mascarpone mixture until light and fluffy.
Quickly dip each ladyfinger into the mint soak for about 1 second per side. Arrange the ladyfingers in a single layer in a 10 × 5.8 × 1.8-inch casserole dish, breaking them as needed to create a snug fit. Evenly sprinkle the mini dark chocolate chips over the soaked ladyfingers.
Spread the mascarpone mixture evenly over the chocolate chips, smoothing the top with a few gentle swoops for an elegant finish.
Cover and refrigerate for at least 4 hours, preferably overnight.
Just before serving, lightly shower the surface with the finely shaved dark chocolate and serve chilled.
