Basil and Cantaloupe Salad

 

Cataloupe, lime juice, fresh mozzarella pearls and nests of prosciutto. Summer on a plate!

Ingredients

2 cups diced cantaloupe

Juice of 1/2 lime

1/2 cup fresh mozzarella pearls

4 prosciutto slices

5 fresh basil leaves, thinly sliced

Flaky salt, to taste

Black pepper, to taste

Instructions

  1. Dress the cantaloup in lime juice; toss well.

  2. Arrange the cantaloupe and mozzarella pearls on a serving platter or in shallow bowl.

  3. Mound each slice of prosciutto into a "nest" and nestle them over the top.

  4. Sprinkle with fresh basil.

  5. Refrigerate for 30 minutes.

  6. Finish with flaky salt and black pepper, just before serving.
