Fiesta Beans
When you don’t have time to prepare authentic refried beans, pico de gallo, canned pinto beans and shredded cheese will get you there muy rapido!
Ingredients
1 teaspoon olive oil
1/2 cup pico de gallo
1 15-ounce can pinto beans, drained
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/3 cup Mexican cheese blend
2 tablespoons chopped cilantro
Instructions
Heat olive oil over medium heat. Sauté pico de gallo for 1 minute.
Add beans, cumin and salt. Cook 1-2 minutes. Mash to desired consistency.
Add a tablespoon of water if the mixture is too dry. It should be nice and creamy.
Turn off the heat and add the cilantro. Serve immediately.
